Zucchini Crusted Pizza

We have a small garden with LOTS of zucchini. Here's a nice recipe I wanted to share with Navonod readers.

Heat the oven to 350 F.

Combine:

3 cup grated zucchini

3 eggs

1/3 cup flour

cup grated mozzarella

cup grated parmesan (or 1 cup total grated cheddar)

1 Tablespoon fresh basil

salt and pepper

Salt lightly and let sit for 15 minutes; squeeze out excess water.

Put in 9 X 13 pan and bake crust for 350 F for 20 25 minutes; until surface is dry and firm.

Brush top with oil and BROIL for 5 minutes.

Pile favorite pizza toppings. Heat 350 F for 25 minutes.

Cut into squares.
